Depending on your location, the weather is changing fast.  Those of us in the great white north have had the ‘pleasure’ of our first snow. The holiday (stress) season is in full swing.  Whatever your plans are, we hope you have a safe and happy time.

Depending on your traditions, your celebrations probably involve food, friends, and family. All that celebrating can be quite stressful for many reasons, but it really doesn’t have to be. There are ways to prevent the stress by planning ahead for everything, and there are ways to recover from all that fun too.

There are many aspects to wellness that make up a healthy life. We strive to balance our intellectual, physical, spiritual, environmental, occupational, financial, emotional and social wellness.  We will be talking about one of these every Wednesday and how to create balance in each of them. Think about what part of your life might be out of balance, and try to figure out what might be out balance. We will bring you tips, tricks and ideas to help you get closer to balance in your life. So this week, take a few minutes to think about what part of your life needs a little extra attention and check back next week as we start looking at physical wellness and how we can do better every day to stay healthy and happy.

But in the meantime, here are a couple of super easy and fast dessert recipes for Thanksgiving or any gathering that you can throw together in no time, helping you keep your stress levels down, and your friends and family happy.

Easy Key Lime Pie Recipe from She Saved

Ingredients:

Directions:

  • Put the softened cream cheese in a bowl and mix with your hand mixer until creamy.  Add the sweetened condensed milk and mix until combined.
  • Add the lime juice and the food coloring.  Mix until combined.
  • Pour into the pie tin.  Refrigerate until set, about an hour.
  • Garnish with lime zest and lime slices if you’d like.  Yummy with some whipped cream on top, too!

Easy Peach Cobbler
Miss Jean’s Peach Cobbler
4 cups fresh peaches sliced* or 29 ounce can sliced peaches in heavy syrup
1 1/2 cups self-rising flour**
1 1/2 cups milk
1 cup sugar
1 stick butter, melted

In a 9×13 inch dish pour melted butter. Mix flour, milk, and sugar to make a smooth batter. Pour batter over melted butter. Put fruit on top, syrup and all. Bake in a 350 degree oven for 40-45 minutes. Let set 10 minutes before serving. Serves about 10.

* if using fresh fruit, add extra sugar to the fruit, about 1/2 cup
** if using plain flour, add: 2 tsp. baking powder and 1/4 tsp. salt to the flour.
